Boston Lettuce and Chopped Herbs with Shallot Cider Dressing Recipe

I’ll bet this is the shortest salad green selection you have ever encountered. By the way, this is what salad means to continental diners: A delicious lettuce, with 1 or two of your favorite herbs, period! A perfect choice when you are serving a long menu involving many dishes and ingredients: You just can’t miss.
Salad greens
8-10 cups Boston lettuce, torn to bite-size pieces
4 ribs celery, sliced very thin
Handful each basil and parsley, chopped
Salad Dressing:
4 medium shallots
½ cup olive oil
1/4 cup honey
1/3 cup balsamic vinegar
½ cup natural apple cider (this is juice, not vinegar)
Salt and pepper to taste
Instructions:
Blend shallots and olive oil in a food processor or blender. Add all remaining ingredients and process.
Makes about 2 1/2 cups dressing. Our over your favorite salad greens, just enough to coat them lightly.
