Boston Lettuce is one of my favorite lettuce. So delicious that just Boston lettuce properly dressed, and hardly anything more, is enough to make you a wonderful salad. I’ll bet this Boston lettuce salad is the shortest salad green selection you have ever encountered. By the way, this is what salad means to continental diners: A delicious lettuce, with 1 or two of your favorite herbs, period! This Boston lettuce salad is a perfect choice when you are serving a long menu involving many dishes and ingredients: You just can’t miss.
8-10 cups Boston lettuce, torn to bite-size pieces
4 ribs celery, peeled and sliced very thin
Handful each basil leaves and parsley, chopped
2-3 medium shallots
½ cup olive oil
1/4 cup honey
1/3 cup balsamic vinegar
½ cup natural apple cider (this is juice, not vinegar)
Salt and pepper to taste
Arrange the salad greens in a salad platter.
Make the dressing: Blend shallots and olive oil in a food processor or blender. Add all remaining ingredients and process. Makes about 2 1/2 cups dressing.
Pour just enough salad dressing over the salad greens to coat them lightly. Keep the remaining salad dressing refrigerated in a glass jar.
