Boston Lettuce and Chopped Herbs with Shallot Cider Dressing Recipe

Boston Lettuce is one of my favorite lettuces. So delicious that just Boston lettuce properly dressed, and hardly anything more, is enough to make you a wonderful salad. I’ll bet this Boston lettuce salad is the shortest salad green selection you have ever encountered. By the way, this is what salad means to continental diners: A delicious lettuce, with 1 or two of your favorite herbs, period!  This Boston lettuce salad is a perfect choice when you are serving a long menu involving many dishes and ingredients: You just can’t miss.

Ingredients

Salad greens

  • 8-10 cups Boston lettuce, torn to bite-size pieces
  • 4 ribs celery, peeled and sliced very thin
  • Handful each basil leaves and parsley, chopped

Salad Dressing:

  • 2-3 medium shallots
  • ½ cup olive oil
  • 1/4 cup honey
  • 1/3 cup balsamic vinegar
  • ½ cup natural apple cider (this is juice, not vinegar)
  • Salt and pepper to taste

Instructions

Arrange the salad greens in a salad platter.

Make the dressing: Blend shallots and olive oil in a food processor or blender. Add all remaining ingredients and process. Makes about 2 1/2 cups dressing.

Pour just enough salad dressing over the salad greens to coat them lightly. Keep the remaining salad dressing refrigerated in a glass jar.
