Minted Cucumber Raita

Think of Raita not only as a cool and delicious way to put out the fire of curries, but even on its own: mint, cucumber, yogurt: What could be more fun and more yum?
Ingredients:
3 cups plain low-fat yogurt (soy or coconut yogurt for non-dairy)
Salt and pepper to taste
1 tablespoon cumin
Red pepper flakes to taste (skip if you want an all-mild raita)
1/4 cup mint leaves, packed, chopped
1 tablespoon sugar
1 large seedless cucumber, grated coarse
Instructions:
Mix all ingredients gently in a bowl. Serve chilled with curried dishes. Makes about 4 cups.
