Julia Child’s Gateau Reine de Saba

I got my inspiration directly from Julia Child. The name Reine De Saba is not too presumptuous for this fabulous and ethereal dessert. It is almost flourless, but I make it completely so, and enjoy it on Passover too. Its short and dazzling ingredient list read like that of a giant chocolate truffle. Chocolate and hazelnuts: If you have a better match in mind, send it my way! It doesn’t hurt that it is so simple to make. Gluten-free without even trying, and dairy-free to boot: It won’t hurt any to substitute a good margarine for the butter, as the cake has too many exciting flavors going for it

Ingredients:
1 3/4 cups ground hazelnuts
3 tablespoons sugar
1/2 cup natural margarine spread (health-foods store)
2 tablespoons brandy, bourbon or rum
1 cup semisweet chocolate chips, best quality
1/2 cup sugar
4 eggs

Instructions:
Preheat oven to 375 degrees.

In a food processor, finely grind the nuts and the 3 tablespoons sugar, and set aside. Melt margarine, brandy and chips on a very low flame or in a microwave. Cream the remaining sugar and eggs in a food processor until light and fluffy. Add the chocolate mixture and pulse 2-3 times. Fold in the nut mixture by hand. Pour the  mixture into a greased 9 inch spring form mold and bake 20 to 25 minutes. Unmold, let it cool and apply the glaze. If you’d like, for a more presentation, garnish the cake all around the sides with toasted chopped hazelnuts.

Glaze:
1 cup semisweet chocolate chips, best quality
1/3 cup natural margarine spread (health food stores)

Melt the chocolate chips with the margarine on a very low flame or in a microwave. Let the mixture cool a little before spreading over the cake, and on the sides. If you are adding the chopped nuts around the sides, wait a few more minutes, until the glaze is almost set.

      Please don’t box yourself in with any one brand, it would be most inconvenient on shopping days you can’t find it. Rather, look in your health food store (an now increasingly, in better supermarkets) for a brand that clearly states non-hydrogenated, no transfats. There are several terrific brands.
