Although I always experiment with – and get wonderful results  with  – gluten-free ingredients, there’s no need to put the whole nation on a gluten-free diet  (thank goodness we are not all afflicted!) I always have in mind  those of us who are looking to curtail the gluten in their diet, in favor of a whole foods diet. You may already know my motto, which I intend to use extensively in my new natural spelt dessert line (ready very soon G-d willing!): Enjoy spelt: low in gluten, high in fiber, high in protein, high in flavor. How can you  go wrong?  There is nothing you can’t bake with spelt –  from breads to cookies, and even party cakes.   Come to my next class and  learn how to make your favorites  with spelt, so that you can  enjoy your favorites more often! I will be demonstrating the following:

  • Challah
  • Italian bread
  • Herb foccacia
  • Babka
  • Muffins
  • Chocolate chip cookies
